Pacific Fusion Grilled Chicken & Baked Sweet Potatoes




Pacific Fusion Chicken:

Take 2 lb of chicken and cover with Wildtree's Pacific Fusion sauce.  Cover and shake container to mix well.  Marinate overnight (or throughout the day).  I actually forgot about it and it marinated for 3 days....so yummy!  Grill or cook over stove when ready!

Sweet Potatoes:

Preheat oven to 400 degrees.  Line baking sheet with foil.  Cut off ends of potatoes and place on baking sheet.  Bake 60 minutes or until tender.  We added a little butter and brown sugar :)

Macaroni & Cheese Wildtree Style

~1/4 cup milk
~1/4 cup Wildtree Kids Cheez Blend
~5 oz. pasta of choice

Cook 5 oz. pasta of choice according to directions.  While pasta is cooking, whisk together milk and cheez blend in a saucepan and heat up.  Drain pasta.  Return pasta to pan, add cheez sauce, and stir to combine.  Serve immediately and enjoy!

Just Like Mom's Mini Meatloaves, Dill Mashed Potatoes, & Green Beans w/Almonds


Just Like Mom's Meatloaf: (I would eat this everyday!!!!!!)

~2 lb ground beef
~1 package Just Like Mom's Meatloaf Mix
~1/4 cup soy sauce
~2 large eggs, lightly beaten
~1/4 cup milk
~1/2 cup ketchup
~1 T mustard
~1 T brown sugar

Preheat oven to 350 degrees.  Mix together ground beef, soy sauce, eggs, milk and Just Like Mom's Meatloaf Mix.  Mold meatloaf into 8 oval shaped mini meatloaves.  Mix together ketchup, mustard, and brown sugar and spread over the meatloaves.
Serves 8.

Dill Mashed Potatoes: (I cut this recipe in half for our family and still had leftovers!)


   1 lb red potatoes, peeled and cubed

   ½ cup milk
   1 tablespoon butter or 1 tablespoon Wildtree Natural Butter Flavor Grapeseed Oil
   1 tablespoon Wildtree Dill Dip Blend
   ½ cup cream cheese, softened
   salt & pepper to taste

Mix the Dill Dip Blend with the cream cheese and let stand for one hour (it blends better but you do not have to let stand the full hour if you are in a hurry!)  Meanwhile, place potatoes into a pan full of cold water and bring to a boil.  Boil for 15-20 minutes.  Drain the potatoes and return to the pan.  Mash the potatoes with milk, butter, and the dill cream cheese.  Add salt and pepper to taste.

Tortellini w/ Alfredo & Peas

This is a great meal when you need to put something together last minute!  It is really yummy and great for kids too :)


1. Prepare tortellini according to the package instructions
2. Prepare Wildtree's Alfredo sauce according to instructions in separate saucepan (Just need butter, milk, and Alfredo powder mix).
3.  I steam peas in the microwave
4.  Add all three together and enjoy!!!

Shrimp Scampi


This meal is so yummy, and so easy to make! It serves 4, so my husband and I have leftovers for lunch the next day (as long as we don't destroy the other 2 portions :).

Shrimp Scampi:

~1 lb. shrimp, uncooked, peeled and de-veined (I used a frozen package of shrimp and thawed it in water)
~5 T Natural Grapeseed Oil (or Garlic GSO)
~4 t Wildtree Scampi Blend
~1/2 lb. linguine or other type pasta, cooked according to package directions and reserve 1/2 c pasta water

Place shrimp, 1 1/2 t Scampi Blend and 3 T Natural Grapeseed Oil in a cold skillet. Toss and bring to a low heat cooking until shrimp are pink, turning often.  Remove shrimp from pan leaving cooking juices behind.  Add the remaining oil, 1/4 c pasta water, and 2 1/2 t Scampi Blend to the skillet.  Add the cooked pasta to the pan and toss until the juices are absorbed.  Add shrimp and serve.

This time I added red pepper, garlic, onion, grape tomatoes, and mushrooms with the shrimp and sauteed them together.  We loved it!!!!  Enjoying the leftovers as I type this :)

My Adventures in Meal Planning

Alright.  I sat down and planned meals (for days we are actually home) for the next two weeks.

Steak & Asparagus



This meal was actually a freezer meal!  We bought the meat fresh a few weeks ago, split it up into our family portions, put it in a freezer zip lock bag, added Wildtree's Wicked Good Slow Cooker sauce and froze it!  Yesterday I took it out in the morning and stuck it in the fridge.  By dinner time it was marinated and ready to grill! Yum Yummy!  Asparagus was steamed and I added a little salt and Natural Butter Grapeseed Oil.

SO EASY and SO GOOD! :)
